A Brief History of Sushi

One of the most popular stories surrounding the origins of sushi dates back to the second century A.D. According to the tale, sushi originated in China as a way of preserving fish. Back then, the farmers who lived along the Mekong river complimented their agricultural activities with fishing. However, most of the fish they caught decayed before they could eat them. As a result, a means of preserving the fish became a necessity.

Eventually, the locals discovered that the glutinous rice they cultivated could serve this purpose perfectly. As such, they began to use it as a preservative. They did this by rubbing the fish with salt and drying it in a barrel for some weeks.

After that, they immersed the fish in the glutinous rice and allowed it to ferment. During this period, the fermented rice produced lactic acid bacilli, which reacted with the salt to slow down the microorganisms' activities that caused the decay. After this, the locals would throw away the rice and eat the fish. They originally called this dish Narezushi. However, sushi has evolved into the modern delicacy prepared in restaurants today.
